Some places define a city more than its landmarks ever could. In Burma, these landmarks are the ever-buzzing tea shops. Tea shop visits are a part and parcel of daily life in Burma. People walk in for a quick breakfast, a quiet afternoon pause or an evening catch-up with a friend who just wants to ‘grab a bite with some tea’. Burma eats, sips, lives and breathes in these tea shops. Long before cafés became the go-to places to work from or catch up with friends, these tea shops were the lively hangout spots that the Burmese frequented and continue to visit to this day. They are famous for their pulled teas, exciting menus and serving dishes that are deeply satisfying and meant to be shared.

If you've travelled with us through our stories before, you'll know that we often return from Burma with more than recipes. Sometimes we bring back a forgotten ingredient, a cooking technique passed down through generations, a tradition or just a feeling, a moment that refused to leave us. And Burmese tea shops have always been an important part of these memories. Over countless visits across Yangon and beyond, we've found ourselves returning to these lively neighbourhood spaces where everything is unhurried, meals stretch into conversations and one cup of tea is followed with another and then another. Tea shops have shaped Burmese food culture for a long time, and they have also been a great source of inspiration for what we create in the kitchen and bring to the table. This time, we bring to you a limited-edition menu starring two of Burma’s favourite tea shop snacks - PaukSe and Palata along with desserts that will keep you coming back for more and an exciting range of pulled teas to complete the experience.

Windows to Burma: The New Limited Edition Menu

At first glance, both PaukSe & Palata are just breads. But when you look closer, you’ll spot the age-old influences of the neighbouring countries on Burmese cuisine. With this new limited-edition menu, we reimagine these Burmese teashop favourites through a modern lens.

What is PaukSe?

/pow-say/ are the soft and pillowy steamed buns enjoyed throughout Burma. Served with an array of sweet or savoury fillings, they’re a reflection of Burma’s East Asian roots. Over the years, they’ve become an everyday favourite in Burma and are best paired with a leisurely cup of afternoon tea. We bring to you:

- Delicate Tofu & Scallion Twist that comes seasoned with fragrant Burmese spices

- The playful PaukSe Burger that pairs a crisp corn patty with a soft steamed bun topped with poppy seeds

- The Spicy Curry Buns for times when you’re craving a hearty, indulgent bite

What is Palata?

/pa-LAH-tah/ are flaky breads pulled apart by hand & dipped into fragrant, hearty curries and are basically comfort food at its simplest and most satisfying. With their flaky, buttery layers, Palatas echo South India's influence on Burmese cuisine. If you love a good, crispy bread, our Palata selection is just for you.

- Bite into the Tea Break Palata, which comes generously topped with lentil curry, brown onions, mint and green chillies, just as it is served in Yangon’s tea shops

- Need a comforting bite? Try our Sunday Curry Palata served with a mildly spiced potato and plant protein curry.

- The exciting OG Burmese Taco come layered with richly seasoned plant-based mince are a street-food classic.

- The Palata Sando marries tradition with modern comfort in a sandwich stuffed with an edamame and water chestnut patty between crisp, flaky layers of Palata.

Pulled Teas tell the stories of Burmese tea houses which serve freshly brewed cups of strong, fragrant and creamy Burmese teas along with delicious snacks. The ‘pull’ refers to the way they are poured from a height for that signature foamy top.

- Sip on our Pistachio & Saffron Pulled Tea or Cinnamon Spice Pulled Tea if you’re in the mood for something warm, comforting and luxurious.

- For a chilled sip, try the Sea Salt Honeycomb, which comes topped with lemon mousse and honeycomb or the Jasmine Rice & Brown Sugar, which is served with brown sugar jelly and soft cheese foam.

- Also on the menu is our in-house cola creations, BB House Cola, which comes with a kick of tamarind.

No meal is complete without something sweet and this menu brings to you two tea shop classics with a modern twist.

- Bite into the crisp layers of our Tea Shop Cream Puff which comes stuffed with malai cream and Thai tea mascarpone, served on the side.

- Try our Nutty Banana Sundae, a new take on one of Burma’s favourite indulgences, which comes with hazelnut spread, condensed milk and banana served over pulled palata.
